Indian Vegetarian Diet Optimization

Generate nutritionally optimized 7-day meal plans for urban Indians across activity levels with regional diversity.

What this research found

Three seven-day vegetarian meal plans were assembled for urban Indians at sedentary, moderate and active activity levels, drawn from a database of more than 300 traditional dishes and checked against India's national dietary guidelines. Daily energy runs from 1,521 kcal for a desk worker to 2,572 kcal for the active plan while the macronutrient split stays almost constant, and all three clear the fibre recommendation. The sedentary plan additionally swaps fried snacks for quick-prep, desk-friendly foods.

  • The three plans span 1,521 ± 79 kcal per day for the sedentary profile, 2,297 ± 226 for moderate and 2,572 ± 385 for active — a 51% step from sedentary to moderate and a further 12% to active — achieved with portion multipliers between 0.8x and 2.1x.
  • Scaling energy did not distort composition. Protein holds at roughly 13–14% of calories across all three plans, carbohydrates at 63–65% and fats at 21–23%, with the protein share varying by under 3%.
  • Protein rises with activity from 50.3 ± 3.9 g to 61.9 ± 6.0 g to 68.0 ± 8.7 g per day, all at or above the 50 g minimum, and fibre runs from 28.6 g to 39.4 g against a 25–40 g target.
  • Only the active plan landed inside its own calorie band of 2,400–2,600 kcal. The sedentary plan came in under its 1,600–1,800 band at 1,521 kcal, described as deliberately conservative because people tend to overestimate their activity, and the moderate plan overshot its 2,000–2,200 band.
  • The sedentary plan substitutes quick-prep items such as poha, upma, idli and dhokla, plus portable snacks like ghugni and roasted chana, for fried snacks including samosa, pakora and fafda, and carries 28.6 g of fibre a day as a counter to prolonged sitting.

How it was done

Nutritional values for more than 300 traditional Indian dishes were taken from the Indian Food Composition Tables published by the Indian Council of Medical Research's National Institute of Nutrition. Four meals a day — breakfast, lunch, snack and dinner — were selected across seven days under multi-criteria constraints on energy, protein, fibre and regional balance, first as a single general plan averaging 2,038 kcal and 57.8 g of protein with meals drawn from North, South, East and West Indian cuisines, then rebuilt for three activity profiles using dynamic portion multipliers and a substitution rule that stripped fried snacks out of the sedentary plan. All 84 resulting meals were validated against the activity-specific targets, and the work was written up as a 16-page report with 15 verified citations plus a 21-slide deck aimed at nutritionists and fitness trainers.

Limitations

The plans constrain energy, macronutrients and fibre only; micronutrients that commonly run short in vegetarian diets, including vitamin B12, vitamin D, calcium and iron, were not modelled. Nothing was tested with real eaters, and the work recommends three-to-six-month trials of adherence and metabolic outcomes as the next step.
